Whole Duck (Frozen)
Free range, premium quality duck from Great Ocean Ducks in Port Campbell, on the Great Ocean Road. In addition to forage and a specifically formulated diet, these ducks are fed a variety of summer fruits and berries including cherries, strawberries, quinces and apples which gives them a delicious and unique flavour.
To simply roast, preheat oven to 190C for 10 minutes so the oven is nice and hot. Dry off the skin with paper towel (or even better, leave uncovered in the fridge overnight to dry the skin out). Place duck on a rack in a roasting pan, season with salt and pepper then bake for 40min/kg. For excellent roast potatoes, prepare and place in the bottom of your roasting pan to soak up all the juices.
Your free range whole duck will be a minimum of 2.5kg and come to you frozen and vacuum sealed with approximately 60 days shelf life when kept in your freezer. These are genuine paddock reared, free range ducks.
