Dont be intimidated by the chicken! They are so easy to cook. Preheat oven to 180c. Rub chicken with olive oil, salt, pepper, thyme and marjoram. Insert a whole quartered lemon into the cavity of the chook. Roast breast side down for 30 minutes, then flip the chook over on to it’s back and roast for another 40 minutes. Remove from oven, cover in foil and leave to rest for 20 minutes.
Your free range chicken/s will be a minimum of 1.6kg and come to you bagged with a shelf life of approximately 4 days. They can be frozen for up to three months. Will serve four adults generously.
