Pulled Brisket Nachos

This nacho recipe comes together in less than half an hour and is sure to please kids and adults alike.

Pulled Brisket Nachos

Ingredients

  • 1 Pack Coffee Rubbed Pulled Beef Brisket (or other flavour of your choice)
  • 1 Bag of corn chips
  • Cheese (we used a combination of Mozzarella and Colby but you can use any type you have on hand)
  • Sour cream
  • 1 Avocado
  • 1 Lime + extra to serve
  • 1 Red onion
  • 2 Tomatoes
  • 1 Bunch of coriander
  • Salt and pepper

Method

  1. Preheat oven to 180C.
  2. Add a layer of corn chips to a baking tray/dish.
  3. Sprinkle with cheese and brisket, then bake in the oven for about 20 mins on 180C.
  4. While this is cooking, prep the guacamole and salsa. Finely dice tomato, onion and coriander, then toss together with a squeeze of lime and a pinch of salt and pepper. 
  5. Peel and de-seed your avocado, add to a bowl and squeeze in lime to taste (usually you'll need about half a lime per avo), then mash thoroughly.  Add a pinch of salt and pepper and mix everything through.
  6. Remove nachos from the oven and slather in guac, salsa and sour cream. Yum!
