Goats Cheese and Beetroot Salad
A super simple, refreshing salad that's perfect for summer entertaining.
- 1 pack Baby Beetroot (pre-cooked)
- A few cubes of goats cheese
- Rocket (a big handful)
- Balsamic vinegar
- Olive oil
- Salt and pepper
- Slice baby beetroot into quarters and toss with rocket.
- Pull apart goats cheese into smaller chunks and sprinkle on top
- In a separate bowl, combine a little balsamic vinegar with some olive oil and a pinch of salt and pepper. Pour over the salad.
