Goats Cheese and Beetroot Salad

Ingredients

  • 1 pack Baby Beetroot (pre-cooked)
  • A few cubes of goats cheese
  • Rocket (a big handful)
  • Balsamic vinegar
  • Olive oil
  • Salt and pepper

Method

  1. Slice baby beetroot into quarters and toss with rocket.
  2. Pull apart goats cheese into smaller chunks and sprinkle on top
  3. In a separate bowl, combine a little balsamic vinegar with some olive oil and a pinch of salt and pepper. Pour over the salad.
