Honey and Herb Butter Carrots
Delicious dutch carrots with honey and butter - a perfect side for roasts!
- 1 Bunch of dutch carrots
- Allow butter to soften (but not melt). Pick the leaves off of a couple of sprigs of thyme and tarragon and finely chop. Mix through the butter and allow to infuse. If you like, you can do this ahead of time so it has more time to get nice and flavoursome.
- Steam carrots on the stove until they yield to a knife but aren't too soft - use a steamer basket for this if you have one.
- Add into a large bowl and toss with a big chunk of herb butter plus about 1/2 tbsp of honey. The heat from the carrots will melt these, so make sure they're well combined.
- Finely chop some parsley leaves and sprinkle over the top of the carrots to finish.
