Our Favourite Oyster Mignonettes

A mignonette is a vinegar based dressing for oysters and other seafood. We love them because they really elevate the seafood experience, make you feel a bit fancy, and can sometimes even convert an oyster nay-sayer!

Our Favourite Oyster Mignonettes

Ingredients

Option 1: Apple and Red Wine Vinegar

  • ⅓ cup Red Wine Vinegar
  • 1 tbsp finely cubed sweet red apple (we used Jazz but you could also use Pink Ladies)
  • 1 tbsp finely cubed green apple
  • 1 tbsp finely cubed shallots
  • a pinch of black pepper (use a light hand!)
     

Option 2: Apple and Mint

  • ⅓ cup apple cider vinegar
  • 1 tbsp finely cubed sweet red apple (we used Jazz but you could also use Pink Ladies)
  • 1 tbsp finely cubed green apple
  • 1 tbsp finely cubed shallots
  • A tiny pinch of ground white pepper (TINY!! Do not overdo this)
  • A few mint leaves

Method

Note: you can use the same method for either of these recipes! Make one or both and serve with oysters, prawns and even your Christmas lobster/crayfish.

 

  1. Slice shallots and apples into very small cubes. Finely slice any herbs you may be using at the same time.
  2. Add into a bowl with all other ingredients and refrigerate for at least 1 hour before serving. Preferably you would make this earlier in the day or the day before so the ingredients can properly infuse. Mignonettes can be stored in the fridge for up to 3 days (although mint will lose its colour after some time so you can always add this in closer to serving if needed).
  3. When serving, spoon a small amount over each oyster, then enjoy.
